TOMATO SAAR
Amchi
Easy, soupy, delicious and very Amchi! Try it with steaming hot rice. I think saar means essence or extract in Sanskrit and Konkani.
INGREDIENTS
3 cups of chopped tomatoes
2 cups water
1/2 tsp salt
1 1/2 tsp brown sugar
1 tsp cumin powder
1 tsp chopped green chili pepper
3/4 coconut milk ( canned)
1 tsp cornstarch
tempering
2 Tbsp oil
1/2 tsp mustard seeds
1/4 tsp cumin seeds
1/4 tsp asafoetida
about 7 curry leaves
1 small green chili optional
DIRECTIONS
Pressure cook the first six ingredients for two minutes.
Cool the mixture and blend until smooth.
Stir in the coconut milk and cornstarch.
Simmer the curry, saar, over low heat for 5 minutes.
While the saar is cooking prepare the tempering.
Heat the oil in a small pan and add the seeds, mustard and cumin. Cover.
At the sound of the first few pops, turn off the heat and add the asafoetida, curry leaves and chili.
Cover. Every ingredient will continue to sputter and cook in the hot oil for half a minute.
Now pour the tempering mix into the saar and stir.
Check the flavors, add salt or brown sugar if necessary. Make it perfect.
