CARROT KOSHIMBIR

                                        Amchi vegan                                            


                                                                    Carrot Koshimbir

                                                          A Koshimbir is an Amchi salad


INGREDIENTS

4 cups grated carrots

1/2 cup minced onions

Juice of 1 lemon

2 Tbsp finely diced fresh cilantro

1/2 tsp finely diced green chili

1 tsp salt

4 tsp sugar


Tempering

2 tsp oil

1/2 tsp mustard seeds


DIRECTIONS

Gather all the salad ingredients in a non reactive bowl, stir and set aside for about half an hour.

Now it's ready for tempering.

Heat the oil in a very small pan and toss in the mustard  seeds.

At the first few pops turn off the heat and pour the warm oil and mustard seeds over the carrot salad.

Stir and absolutely enjoy!
