BATATA SONG Potato curry Amchi

 This is Dad's favorite Amchi Potato Curry, spicy hot with cayenne and tangy with tamarind. It is very simple and very tasty.  Let it cook slow and easy. 

                                  

INGREDIENTS

3 medium yellow potatoes, cooked, peeled and cubed, 2 cups

1 largeish onion, finely sliced, 1 1/2 cups 

2 Tbsp oil

2 dry red chillies or 1 tsp cayenne powder

1 tsp salt

1/2 tsp sugar

1 1/2 tsp tamarind extract from Indian food store or 1 cup small diced tomato

1 cup water


DIRECTIONS

Saute the onions in the oil over medium heat until they become pinkish and very soft.

Stir in the tamarind paste, salt, sugar and cayenne and blend into the onions.

Stir in the potato cubes gently so they do not break up.

Add the water, give it a good stir, cover and cook over low heat for about 30 minutes,

Check the quietly bubbling song frequently. The gravy should thicken but not dry out.

Serve the batata song with rice or chapatis.
