MUSHROOM PULAO Indian vegetarian main

                                                               

                                                                 MUSHROOM PULAO


                                   Easy and delicious and foolproof!  Enjoy it goodly my darlings!


INGREDIENTS

8 oz sliced mushrooms, any kind

1 1/2 cup Basmati rice washed and soaked

1 Tbsp ghee or oil

3 bay leaves

10 peppercorns

1 sliced onion, about a cupful

1 Tbsp ginger garlic paste

3 cups water

1 1/2 tsp salt or to taste


DIRECTIONS

Heat ghee or oil over medium heat in a suitable pan, add the bay leaves and peppercorns and saute for a minute till the aroma rises.

Now add the onion and ginger garlic paste and saute for 2 minutes.

Stir in the rice and saute gently or another 2 minutes.

Add water and salt and the mushrooms, bring the mixture to a boil.  Cover, reduce heat to low and cook till the rice is just done, about 10 minutes. Keep the lid on and do not disturb for 5 minutes.

It is ready now.  The rice is cooked perfectly, the grains of rice holding their shape and the mushroom slices with the tiniest snap to them.

Garnish with a skinny drizzle of ghee if you wish.
