                               KENJI INSPIRED CHICKEN WITH MAYO AND CILANTRO

                                             A successful summer's day experiment.


INGREDIENTS

1 1/2 lbs boneless chicken thighs

1/2  cup mayonnaise

4 Tbsp green cilantro chutney,  I used a store bought variety

1 Tbsp lemon juice

1/2 tsp salt

4 Tbsp goodly oil


DIRECTIONS

Stir the mayo, chutney, salt and lemon juice together into a thick marinade and set aside.

Remove fat globs from the chicken thighs and pierce them.

Slip the chicken thighs into the marinade.

Stir the chicken and marinade together, massaging each piece thoroughly with the green marinade.

Cover and set aside for a couple of hours or overnight.

Heat the oil on high heat in a suitable pan, add the chicken thighs and sear for 4 minutes.

Lower the heat to medium, turn the chicken over to saute for another 5 minutes.

Cover, turn off the heat and let rest for 5 minutes.

Serve the chicken in a gorgeous serving dish and drizzle with pan drippings, freshly ground black pepper and a pinch of big salt.
