EGGS IN TOMATOES AND CHEESE
Amma sometimes made eggs like this. This is my version darlings, try it you'll like it. :) Tomatoes are quickly cooked down to a into a thick, juicy sauce, in which eggs are set individually and then topped with cheese. Such a beautiful dish and so delicious!
INGREDIENTS
4 goodly eggs
1 large tomato, small diced (1 cup)
1 Tbsp oil or butter
1/2 tsp salt
1/4 tsp freshly crushed pepper corns
1/4 tsp green chili, very small diced
6 Tbsp grated Cheddar cheese
INSTRUCTIONS
Combine the tomatoes, salt, peppers and oil/butter in a 7 inch non stick pan and cook over medium heat.
The tomatoes will break down into a saucy mush in about 3 minutes.
Make 4 hollows in the tomato sauce and break an egg into each one.
Spread the grated cheese over it all.
Cover and cook gently over low heat for about 4 minutes.
