TANDOORI CHICKEN
INGREDIENTS
Chicken approximately 2 whole legs, drumsticks and thighs
1 1/2 tsp salt
ghee
juice of a whole lemon
INSTRUCTIONS
Make the masala and yogurt marinade paste following the recipes posted in this blog.
Remove the skin from the chicken pieces and make a few slashes in the flesh.
Rub the lemon juice into the chicken and then follow up with salt.
Now place the chicken in the marinade, stir and slather it into every nook and cranny of the chicken pieces and set aside to marinate for at least 6 hours.
In a goodly non stick pan heat half the ghee.
Place the chicken pieces in the hot ghee. You will hear the whisper of the sear setting onto the chicken.
Cover and cook undisturbed for 20 minutes.
Add ghee to the pan.
Turnover the chicken pieces, sear this other side now, cover and cook for 20 minutes.
Tandoori masala chicken should be done now.
