Few dishes could be more sumptuous or easier than this decadent potato concoction. Jorawar Khan was a chef my mother engaged for her dinner parties in Mehsana, Gujarat. I was a three or four year old then and I remember my sister Kanta being born in our home in Mehsana in November 1950. Jorawar's specialty was a truly amazing biryani. My Amma saved his magical recipe and organized the world's best biryani for years to come. He also made a potato dish to accompany the biryani and this particular recipe is as close to it that I can remember.
