CAULIFLOWER RANDAYI stir fried cauliflower with spices Amchi vegan

                                                              PEAS ARE OPTIONAL   


INGREDIENTS

3 cups cauliflower florets

1/2 onion chopped finely

1/2 cup peas

1/2 tsp cumin seeds

1/2 tsp turmeric powder

1 tsp ginger garlic paste

1/2 tsp chopped green chili pepper

1 tsp salt

2 Tbsp oil

fresh green cilantro leaves

4 cups salted water


DIRECTIONS

Bring 4 cups of salted water to a boil in a large pot.

Toss in the cauliflower florets and blanch for about 3 minutes.

Drain the cauliflower and set aside.

Heat the oil in a goodly pan, add the chopped onions and saute until they are translucent, about 3 minutes.

Add the cumin seeds and fry for a half minute .

Stir in the turmeric, ginger garlic paste and green chilis and saute for another half minute.

Now add the cauliflower to the pan and stir to incorporate into the onion masala.

Add 1/4 cup of water and salt, cover and cook over low to medium heat till the cauliflower florets are done.

Check for salt and heat and garnish with fresh cilantro.
