GREEN BEANS AND PEAS SUBLIME !
Lemony, fragrant, fast and green! What else is there to say? Ah yes, also fun when the delicate peas pop in your mouth :)
Please use a rubber spatula for stirring, be gentle with the beans and peas.
INGREDIENTS
2 cups green beans, dressed and cut into one inch pieces
1 12 oz bag frozen green peas
2 tsp goodly oil
2 Tbsp lemon juice
1 tsp kosher salt
1/4 tsp garlic powder or 1 mashed clove of garlic
1/2 tsp black pepper
a sprig of green mint
DIRECTIONS
Bring a large pot of salted water to a rolling boil
Lower the beans into the water and cook for 5 minutes.
While the beans are cooking prepare an ice water bath for the beans.
Drain the beans and tumble them into the ice bath to stop the cooking and maintain the green color.
Warm a pan on low heat and add the oil, salt, garlic and black pepper.
Remove the beans from the ice bath and shake off the water thoroughly.
Stir them into the pan, into the warm oil mixture so they are evenly coated with it.
Add the frozen peas and cook on low heat till the peas are thawed and just warm.
Stop! Turn off the heat. Cook no further!
Add the lemon juice.
Check for flavor.
Toss in a sprig of mint if you wish.
