INGREDIENTS

4 cups cabbage thinly sliced

1 cup onion thinly sliced

1 Tbsp oil

1 tsp mustard seeds

1/4 tsp asaphoetida

1/2 small green cayenne pepper sliced lengthwise

1 sprig curry leaves

1/2 tsp turmeric

1 tsp salt

1/4 tsp sugar

l Tbsp lemon juice


DIRECTIONS

Heat the oil in a goodly pan on medium heat and toss in the mustard seeds.

When you hear the first few pops of bursting mustard seeds lower the heat way down and add the asaphoetida, cayenne and curry leaves.

Stir immediately and add the onions and turmeric.

Saute everything in the pan on medium heat for about 5 minutes till onions are translucent but not brown.

Now add the cabbage and salt and sugar and stir fry for 3 minutes, then cover and steam for 5 minutes till the cabbage is crisply done.

Remove the lid and drizzle the cabbage with lemon juice.

Taste a tablespoon of this bright and brilliant veggie concoction!  It should be perfectly salted with a hint of sweetness, and a mouth watering kick of green heat and lemon.
