RED BEAN CURRY

 RED BEAN CURRY




INGREDIENTS

3 cans of beans, drained    I selected light red beans, pinto and great northern beans

1 can of tomatoes with garlic and oregano   

1 medium onion sliced finely

1 Tbsp ginger garlic paste

1 tsp cumin seeds

1 tsp turmeric

1/2 tsp cayenne powder

1/2 tsp salt

1 Tbsp oil

2 Tbsp ghee or butter

2 cups water 

1 Tbsp of fresh cilantro for garnish

a dash of lemon juice

 

DIRECTIONS

Heat the oil and butter in a large pan.

Add the cumin seeds to it and fry for 30 seconds or so till the fragrance breaks out.

Now fold in the ginger garlic paste and fry another 30 seconds.

Fold in the onions and fry till they a pale brown.

Add the turmeric and cayenne powder and the tomatoes.

Simmer this sauce over low heat for about 25 minutes or until the ghee and oil float to the top.

Now add the drained beans and 2 cups of water.  

Bring the curry to a gentle simmer, cover and cook for about 20 minutes.

Adjust for salt and spicy heat, garnish with lemon juice, green cilantro and enjoy!  :)
