 FARFALLE  AND SKIP JACK TUNA SALAD


Here is an easy and refreshing pasta dish that manifests in minutes!   Keeping this salad moist with pasta cooking water and a teaspoon of caper packing liquid takes it to another level of tastiness.  My sister introduced me to a version of this dish and promised me I would enjoy it, and you will too!


INGREDIENTS

4 oz farfalle

1/2 cup cooking water

6 oz skip jack tuna packed in olive oil, do not drain

1 Tbsp great extra virgin olive oil

2 celery sticks, defibered ! and sliced thinly

1/2 cup onion finely sliced

1 Tbsp capers with 1 tsp of packing liquid

1 1/2 Tbsp lemon juice

freshly crushed black pepper corns

1/4 tsp of kosher salt crystals


DIRECTIONS

Cook farfalle according to instructions in a large pot of boiling water laced with 2 teaspoons of salt.

Save 1/2 cup of cooking water.

Drain the farfalle and combine it with 1/2 cup of cooking water, tuna with the oil, olive oil, celery and onion slices, capers and caper liquid, lemon juice, black pepper and kosher salt crystals.

Toss gently and eat.  :)
