SHEERA (Amchi)

Gentle Sheera.  Cream of wheat, milk, butter and sugar are cooked together and scented with saffron to create this sweet dish.  Dad loves the raisins in it.  It is often offered as prasad after religious services and pujas but is also just a delectable dessert after a meal.  Very easy to make, it is always ready to be present, no prima donna capriciousness here.  It is, quite simply, good and delicious. 


INGREDIENTS

1 cup cream of wheat  (NOT instant)

1 stick of butter

1 cup sugar

1 cup skim milk  ( or 1/2 cup whole milk and 1/2 cup water)

some raisins and cashews or walnuts.

pinch of saffron microwaved in 2 TBSP of milk for 20 seconds


 DIRECTIONS 

Melt butter in a goodly pan over medium heat.

Add cream of wheat and fry/roast it over low heat till a wonderful aroma arises. About 5 minutes.  Low heat  NO burn!

Now add in sugar and stir for a couple of minutes.

Pour milk into the mix and add the raisins, nuts and saffron.

Stir as the sheera absorbs the liquid and sugar and comes together in a smooth mass.  This takes about 10 minutes.

You will see the butter glistening all over!  Do not over cook.  Leave it moist and very luscious.
