MAGIC MUSHROOMS
Elegant and savory this side dish comes together in a flash! Magic! Good with pastas, buttery cauliflower rice and roasts.

INGREDIENTS
12 oz mushrooms sliced 1/4 " thick, rinsed and dried
1 Tbsp good oil
1 tsp chopped garlic
1/2 tsp whole black peppercorns
5 bay leaves
1/4 cup red wine
1/3 tsp salt
DIRECTIONS
Warm the oil in a goodly pan.
Toss in the garlic, pepper corns and bay leaves and fry gently as the aromas rise, about two minutes.
Stir in the mushrooms and stir fry, again gently, for about four minutes. The mushrooms will wilt, change color and begin to release liquid. Let them cook for another few minutes as their juices are absorbed.
Add the wine and cook till most of it is absorbed too.
Now add the salt. And more to taste!
