SALMON BAKED WITH GARLIC AND HERBS
I cherish the luminous, healthy salmon that breed and thrive in the wild, cold, waters of Alaska. Everyone must experience Alaska, breathe its pristine air and reconnect with primal memories of vast spaces and endless sky.
INGREDIENTS
1 1/2 lb salmon filet
Marinade
2 Tbsp olive oil
2 Tbsp lemon juice
1 tsp chopped garlic
1 1/2 tsp grainy Dijon mustard
1/2 salt
1/2 tsp black pepper
1 lemon sliced into thin rings
DIRECTIONS
Rinse the salmon, pat it dry and poke some holes in it with a small fork.
In a small bowl combine all the ingredients of the marinade and slather the salmon with it.
Place the salmon in a baking dish and arrange lemon rings on top.
Set it aside for 10 minutes.
Preheat the oven to 400 degrees.
Place the salmon in the preheated oven and bake for 10-15 minutes or until the internal temperature registers 145 degrees.
Remove from the oven and let it rest for 5 minutes.
