Dal is a traditional staple at the Indian table. It is a word that describes both lentils and beans and the soupy puree made from them to accompany rice or chapatis. Varan, an uncomplicated, creamy dal of toor (pigeon peas) is flavored with turmeric and salt and made redolent with ghee. With a bowl of steaming rice, it is comfort food at its best. I love to eat it with yogurt. Delicious!
INGREDIENTS
3/4 cup toor dal
2 1/2 cups water
1/3 inch piece of ginger root
1/2 tsp salt
1/2 tsp turmeric powder
2 Tbsp ghee
DIRECTIONS
Combine the dal, salt, ginger, turmeric and water in an Instapot and select the 'beans' setting (30 minutes ) to cook the dal.
When the dal is cooked use a whisk to smooth it out to a creamy puree.
Stir in the ghee and adjust for salt. It is done!
Serve with hot rice or chapatis, a slice of lemon and a bowl of yogurt.
