Polas are similar to savory crepes or pancakes and are made from a variety of grains and legumes, often combined with herbs and vegetables. Here I used old fashioned oats to create a quick, tasty and nutritious dish that can be enjoyed for breakfast, lunch or dinner.
This recipe makes about 10 polas and it also doubles easily.
I usually have two pans going at the same time and can get 10 polas done in 25 minutes.
I love tomato and onion koshimbir with polas. Give it a try!
INGREDIENTS
1 cup oats old fashioned
1/3 cup flour :)
1/2 cup yogurt substitute with coconut milk for vegan recipe
1 1/4 cup water
1/2 tsp ginger garlic 🧄 paste
2 Tbsp finely diced onion
1/2 tsp finely diced green chili
1/2 tsp salt
1 Tbsp cilantro leaves
Oil or coconut butter for frying
DIRECTIONS
Whip yogurt ( or coconut milk) and water into a smooth liquid and combine it with all the other ingredients. Stir well.
Let the batter relax for 30 minutes.
Heat 1/2 tsp oil in a nonstick pan over medium heat. Ladle a scoop (2 heaped Tbsps) of batter onto the warm oil and gently spread it with the back of the ladle like a crepe, approximately 5 " wide. This is your nascent pola!
Sprinkle a few drops of oil on the pola as it cooks over a medium heat for 2 minutes. Turn it over and cook for another 2 minutes. And it is done! You have a golden brown, delicious pola!
Plate it with a teaspoon of green cilantro chutney and a side of tomato koshimbir.

GREEN CHUTNEY
A bunch of cilantro leaves thoroughly washed. Stems included.
1 green chili pepper
1/2 tsp salt
1 1/2 tsp sugar
Juice of a lemon
Blend
everything with a dash of water. Include the stems, these will help
thicken the green cilantro leaves and green chili into a paste. Green
Chutney!
Do not wash out the blender jar because the chutney clinging sides can be used for masala lassi.
MASALA LASSI
Add 1 cup yogurt and 1 cup water into the blender jar with remnants of the chutney.
Give it a whirl.
Masala lassi is ready. :)
