LAMB SHASHLIK
Shashlik, similar to shish kebab, is a dish of grilled cubes of marinated lamb. It comes to us from the grassy steppes of Central Asia, and in my case from the recipes of the great chef Craig Claiborne. I have made a few small changes to the original recipe, for instance, I substituted cumin for oregano and I added some sage, because beautiful, lilac, Russian sage must surely blow on those windy, distant steppes. :)
INGREDIENTS
1 small boneless leg of lamb Mushroom caps
1 cup red wine Tomato wedges
1/4 cup olive oil Green pepper squares
4 cloves of garlic crushed Onion chunks
1 Tbsp salt Sliced bacon squares
Freshly ground black pepper Eggplant cubes
1 tsp ground cumin
1/2 tsp ground sage
DIRECTIONS
Trim the leg of lamb and cut the meat into two inch cubes.
Marinate the cubes overnight in a mixture of the wine, olive oil, garlic, salt, pepper, sage and cumin.
Preheat broiler.
String the lamb cubes on skewers alternating with vegetable pieces and bacon.
Brush with the marinade and broil beneath high heat 5 minutes on each side.
